Seasonal Cheeses: Irish Cheese Pairings

It's a great season for aged, salty-sweet cheeses. Pungent, sharp blues are a wonderful match for intensely sweet dried apricots and nutty pistachios. Crumbly, crystalline Cheddar is lovely with fresh spring pineapple, honey butter and a dash of smoky paprika.
