Kowalski's is proud to partner with local farmers at Peterson Craft Meats to offer you fresh meat CSA boxes from Osceola, Wisconsin! Every two months, we offer a curated box of fresh locally sourced meat from the Peterson family farm. You can purchase your CSA box bimonthly or sign up for a year's subscription (six boxes total). We are currently taking orders for October and December, available for in-store pickup.

What is a CSA?

Community Supported Agriculture (CSA) consists of a group of people who pledge at the beginning of the season to support a farming operation. In return, they receive bundles of seasonally appropriate products throughout the year. Buying into a CSA allows members to have a connection with a local farm and understand where and how their food is produced. It also builds a relationship between the grower and consumer where both parties share in the farming risks and rewards.

About the Petersons

Peterson Craft Meats is family owned and has been farming the fertile St. Croix Valley for five generations. Today, farming together with integrity as they pass down their heritage and knowledge base to the next generation remains their primary goal. The Peterson family raises and markets heritage-bred livestock with a focus on quality craftsmanship, humane animal care and environmental stewardship. They believe in raising livestock as nature intended, taking what the land gives without taking it for granted. Using regenerative agricultural practices, Peterson Craft Meats aims to build the soils of the St. Croix Valley with organic matter and recycle nutrients through crop rotation and rotational grazing.

The Peterson family also owns and operates Barney's Meats, a butcher shop near Rice Lake, Wisconsin. This gives them the unique advantage of quality assurance throughout the supply chain. As a result, savory taste and butter-knife tenderness show throughout their products.

Animal Husbandry Standards

Peterson Craft Meats' animal husbandry practices center around giving their livestock a safe and healthy place to live, plenty of fresh pasture and ample, clean indoor spaces during the cold winter months.

  • Cattle: The Petersons free raise their cattle, allowing them to roam and graze as nature intended. In the winter months, they ensure full access to hay and other roughage. The cattle also receive straw bedding and windbreaks for comfort on cold winter days.
     
  • Hogs: Peterson Craft Meats also free raise their hogs, allowing them to roam within an expansive outdoor pen filled with trees and nut bushes. Their hogs can root, explore and relax in comfort. During the winter, they are provided shelter and deep-bedded pens. The Petersons feed them a diet comprised mostly of small grains along with recycled leftover food from a local restaurant.
     
  • Lamb: Though Peterson Craft Meats does not raise their own sheep, but they do ensure that their partners – 4-H families who they've known for years – adhere to the same high standards that they do when raising their own animals. These lambs are fed a diet very similar to the Petersons' cattle and receive the same level of comfort and humane care.
