Sure, most cookie recipes call for flour, but if you live gluten free, that shouldn't stop you from joining the holiday cookie crew! Many, many cookies – like shortbread and other sandy, naturally crumbly cookies – don't need gluten to provide structure and chew. When such a recipe calls for all-purpose flour, you can often substitute a gluten-free baking flour with great results (many brands sub 1:1).

This season, we're offering up three straight-up gluten-free cookie recipes. Made moist and chewy with egg whites, tons of chocolate, almond flour, dried fruit, coconut and sweetened condensed milk, they taste so good, you don't need to take issue with gluten to love them.
