Chicken salad is a perfect no-cook, beat-the-heat meal that's super satisfying as well! Aside from the many ways to make it, chicken salad can be served in a variety of ways. We love it scooped on a bed of lettuce or in a halved avocado. Of course, it makes a perfect sandwich or wrap whether on multigrain bread, a croissant or in a flatbread or tortilla. You can also bulk it up by mixing it with some chilled cooked pasta (short shapes work best, and a little extra dressing is usually in order).
One of the most inspired ways to enjoy chicken salad comes to us from Paul, our long-time chef at Kowalski's Grand Avenue Market. He recommends a chicken salad grazing board – scoops of your favorites surrounded by crunchy veggies, crackers or breads for serving. Genius!

- Curried Chicken Salad – Crafted with dried apricots, golden raisins, red onion and garlic with a creamy mayo-based dressing flavored with mild curry powder and sweet mango chutney.
- Cucumber Chicken Salad – This one's made with yogurt, not mayo, and blends fresh mint, lemon, garlic and dill with red onion and chunks of cucumber.
